Mini Apple Spice Loaves

When the air gets crisper and the leaves begin to brown, that can only mean one thing: it’s officially fall, aka apple season! That being said, I’ve decided to put a healthy twist on a childhood favorite of mine, apple spice cake. These mini apple spice loaves are made with wholesome spelt and brown rice flour and are lightly sweetened with maple syrup. They’re packed with flavor from the spices, and the applesauce makes them soft and moist. These mini loaves are perfect for fall and winter, and I hope you enjoy them as much as I do!

Ingredients
  1. 1 cup chopped apple (cut into 1/2 inch cubes)
  2. 2 eggs
  3. 1 ½ cups unsweetened applesauce
  4. 1/4 cup coconut oil (melted and cooled)
  5. ½ cup maple syrup
  6. 1 tsp vanilla extract
  7. 1 cup brown rice flour
  8. 1 cup spelt flour
  9. 1 tsp cinnamon
  10. ¼ tsp ground nutmeg
  11. ¼ tsp allspice
  12. ¼ tsp ginger
  13. 1/8 tsp cloves
  14. 1 tsp baking soda
  15. ½ tsp salt
  16. Zest of 1 orange
Instructions
  1. Preheat the oven to 375 degrees (F) and grease 3 mini loaf pans (I used 5x3”) with coconut oil. Chop up your apples until you have 1 cup of ½ inch apple cubes, and set the cubes aside. Using a whisk or electric mixer, combine all of the wet ingredients in a large bowl. Set the liquid mixture aside, and in a separate bowl mix together the dry ingredients. Gently fold the dry mixture and chopped apples into the liquid mixture, stirring until just combined (be careful not to over-mix). Immediately pour the batter into the prepared loaf pans and bake in the oven for 25-35 minutes, or until a toothpick comes out clean and the loaves are golden brown. Let the bread cool in the pan for at least 15 minutes before cutting, and enjoy!
