Ice Cream Social (Vegan & Sugar Free)

Any good summer night always ends with my favorite treat: a scoop of ice cream! However, the sugary treat always leaves me feeling sluggish, glutted, and bloated. So, to satisfy my cravings I’ve come up with a healthier (and in our opinion, tastier) alternative: low-glycemic, naturally sweetened banana ice cream. I’ve crafted 4 refreshing flavors that reap tons of benefits, each providing a boost in vitamins and minerals, and potent antioxidants. I’m totally obsessed with these ice cream recipes—they’re absolutely perfect for a light summer dessert.

Vanilla Bean Ice Cream

Ingredients
  1. 3 frozen bananas
  2. ½ cup raw cashews (soaked in water overnight)
  3. 2 Medjool dates
  4. Vanilla beans from 1-inch of a vanilla pod (or 1 tsp vanilla extract)
Instructions
  1. Combine all of the ingredients in a food processor or a high powered blender (we used a Vitamix) and process until the ingredients combine to form a creamy, soft-serve-like consistency. Pour the mixture into a parchment paper-line container and place in the freezer for at least 2 hours to set.

Strawberry Ice Cream

  3. 2 Medjool dates

  1. 1 batch of Vanilla Bean ice cream, minus the dates (recipe above)
  2. ½ cup Medjool dates (soaked in warm water for 15 minutes)
  3. 2 tbsp coconut oil (melted)
  4. ½ tsp cinnamon
  5. 1/2 tsp vanilla extract
